whether you’re entertaining or just cooking dinner for the family, this recipe is quite easy and absolutely delicious.

 

Ingredients:

1.3kg (3lb) of pork, diced

2 tablespoons plain flour, seasoned with salt and pepper

4 tablespoons vegetable oil

2 onions, peeled and chopped

3 cooking apples, peeled, cored and chopped

300ml (½ pint) apple juice

600ml (1 pint) chicken or vegetable stock

Salt and pepper

300ml (½ pint) double cream

Method:

1. Toss the pork in the flour

2. Heat the oil in a large frying pan, add the meat in small batches and sauté until golden brown and transfer to a pan or casserole dish which can be used on the hob

3. Gently sauté the onions (adding more oil if required) and apples in the frying pan for 10 minutes without colouring. Add to the meat, then pour in the apple juice and stock and

season with salt and pepper

4. Simmer over a low heat for 1 hour or until the meat is tender

5. Stir in the cream just before serving and adjust the seasoning if necessary
