Delicious for Shrove Tuesday or a special Valentine’s Day meal

 

Ingredients:

110g (4oz) fresh or frozen spinach
50g (2oz) grated Cheddar cheese
110g (4oz) flour
½ teaspoon salt
1 egg
300ml (½ pint) milk
3 tablespoons oil

Method:

  1. Cook the spinach (according to the instructions on the packet if using frozen) then drain and chop roughly
  2. Add the grated Cheddar cheese to the spinach and stir well.  Keep warm
  3. Sieve the flour into a mixing bowl and add the salt, egg and half the milk and  whisk until well blended.  Whisk in the remaining milk and 1 tablespoon of the oil
  4. Heat a little of the remaining oil in a pancake pan (or small frying pan)
  5. Pour in about a quarter of the batter and tip to cover the pan.  Cook for about 1 minute then turn and cook the other side for about 30 seconds and slide the pancake out of the pan
  6. Keep warm whilst you cook the remaining pancakes in the same way
  7. Divide the spinach mixture into four and spread over each of the pancakes and roll them up
  8. Serve warm as a starter or snack

NOTE:  You can also use ready made pancakes
