These are absolutely delicious, not too difficult to make and keep well for several days in an airtight container… they can be made ahead and frozen too. Perfect for all over Christmas and New Year… and a delicious alternative to mince pies!

 

Ingredients:

225g (8oz) self raising flour

75g (3oz) soft brown sugar

50g (2oz) ground almonds

175g (6oz) butter

1 egg

Squeeze of lemon

450g (1lb) jar ginger marmalade/jam

25g (1oz) slivered almonds

 

Method:

  1. Mix together the flour, sugar and ground almonds and rub in the butter until it forms a breadcrumb consistency
  2. Beat the egg and lemon juice together and mix into the dry ingredients to form a dough
  3. Divide the dough into two and knead each half until smooth
  4. Chill the dough for 1 hour
  5. Roll each half to fit a swiss roll tin and put one half into the greased and lined tin
  6. Spread the marmalade over the dough in the tin and cover with the other half of the dough and scatter over the slivered almonds
  7. Bake in a preheated oven at 180°C/350°F/Gas Mark 4 for 1 hour
  8. Once cooked, remove from the oven and cool in the tin on a wire rack
  9. Cut into 15 squares and store in an airtight container
