Summer’s here and picnics at the beach are looming…how about taking some easy homemade chocolate chip cookies…you don’t even have to roll them out!

Ingredients:

125g (4½oz) softened unsalted butter
175g (6oz) soft brown sugar
1 teaspoon vanilla extract
1 tablespoon milk
1 egg, beaten
175g (6oz) plain flour
1 teaspoon baking powder
275g (10oz) chocolate chips (plain, milk or white or a combination of all 3)

Method:

1. In a mixing bowl, beat the softened butter with the soft brown sugar until light and creamy
2. Add the vanilla extract, milk and egg until combined
3. Gently fold in the flour and baking powder then stir in the chocolate chips
4. Line 2 baking trays with non stick paper and drop heaped tablespoons of the mixture onto them leaving about 1¼ inches around each one (no need to flatten them)
5. Bake in a preheated oven at 180ºC/350ºF/Gas Mark 4 for 15 minutes until lightly golden
6. Remove from the oven and leave to rest for 5 minutes before transferring to a wire rack to cool
7. Store in an airtight container
