If you are having a Bonfire Night party, why not try our easy and delicious Bonfire Night Pizza Rolls… they’re perfect to prepare earlier in the day and can be cooked at the last minute then put on a tray with a stack of serviettes before taking into the garden. Why not serve mugs of hot soup too… it always goes down a treat on a cold night and is ideal to serve with the pizzas.

BONFIRE NIGHT PIZZA ROLLS   

Ingredients:
1 teaspoon olive oil

1 medium red onion, thinly sliced

2 large courgettes, sliced

225g (8oz) button mushrooms

1 red pepper, deseeded and sliced

Salt and Pepper

2 Ciabatta rolls
4
 tablespoons of either tomato paste or tomato ketchup

00g (11oz) Mozzarella cheese (grated)
12 black olives (optional)
    

Method: 
1. Heat the olive oil in a frying pan
2. Gently fry the onion for about five minutes then add the courgettes, red pepper and mushrooms and continue gently frying for about 10 minutes. Season to taste.

. Take off the light and drain on kitchen paper
4. Split the rolls and lightly toast on both sides then place on a baking sheet
5. Spread the flat side of each roll with a thin layer of tomato paste or ketchup and divide the vegetable topping between them
6. Sprinkle with the grated cheese and decorate with black olives

. Heat the grill and put the tray under for about 3-4 minutes or until the cheese has melted (but before the rolls colour too much)

Serves 4
