GETTING IN SHAPE FOR THE SUMMER? why not try this fabulous low calorie Slimming World recipe for Tagliatelle Bolognese that the whole family will love

 

The classic beefy sauce from Bologna has become a favourite all over the world! While we Brits usually serve it with spaghetti, Italians favour other types of pasta that hold the sauce better such as tagliatelle – but whatever kind you use it’ll be sensational!

Serves 4

Ready in 40 minutes

Ingredients:

low calorie cooking spray
500g lean beef mince (5% fat or less)
1 onion, finely chopped
2 carrots, peeled and diced
1 courgette, diced
150g closed-cup mushrooms, diced
2 garlic cloves, finely chopped
2 x 400g cans chopped tomatoes
small handful of torn fresh basil leaves, plus whole leaves to garnish
1 beef stock cube
salt and freshly ground black pepper
500g dried long pasta, such as tagliatelle or spaghetti

Method:

Spray a non-stick frying pan with low calorie cooking spray and place over a medium-high heat. Add the mince and stir-fry for 4-5 minutes, then add the onion, carrots, courgette, mushrooms and garlic and stir-fry for a further 3-4 minutes.

Add the tomatoes and basil, crumble in the stock cube, season and stir. Bring to the boil then reduce the heat to low, cover and simmer for 15 minutes, stirring occasionally. Remove the lid and cook for a further 5 minutes.

Meanwhile, cook the pasta according to the packet instructions and drain.

Divide the pasta between shallow bowls and spoon over the Bolognese sauce. Garnish with a few whole basil leaves, give each bowl a good grind of black pepper and serve nice and hot.

For a delicious variation, use a mix of lean beef and pork mince (5% fat or less).
